Here’s a lil vid of a super fun garnish I love to use. It’s rice vermicelli straight outta the pack and dropped in really hot oil. It causes the noodles to puff up and I just dust em with some Cajun seasoning. Here I used em on a miso-soy scallop over a Vietnamese pho. It’s cool, The same noodle used twice in the dish but extremely different applications!
