I recently picked up a new knife to add to one of my bags. The knife I chose to get is the Schrade schf37. It is a very large knife that will work well for chopping if necessary and also will work for a defensive tool.

The Schrade schf37 is a budget friendly knife made from 1095 carbon steel. I always carry a smaller knife on me and usually keep a larger fixed blade in my bag for performing certain tasks.
