Cooking Doves - On the Grill

From the field to the grill. We demonstrate one way to prepare these tasty game birds. Doves are great grilled, fried, or stewed. We grilled about 22 dove breasts after marinating them for 3 hours and wrapped them in bacon. The bacon imparts a great flavor and hey, who doesn't like bacon!

Balsamic vinegar to coat
Olive oil to coat
2 cloves of garlic chopped
One sprig of rosemary chopped fine
A few sprinkles of salt and a grinding of black pepper.

Combine all in a Ziploc bag remove the air from the bag and refrigerate for 3 hours. Remove 30 minutes before cooking and preheat grill to 350 degrees. Wrap with bacon and secure with toothpicks or skewers. Add to grill and cook approximately 7-10 minutes per side depending on how you like your meat.
